tofu n veg bake

  • ½ small butternut squash

  • 2 medium carrots

  • 1 tablespoon Avocado oil or olive oil

  • ½ medium cauliflower

  • 1 lb extra-firm organic tofu

  • 2 small red onions

  • how to

  • Preheat the oven to 400F.

  • Cut squash and carrots into little square chunks and place on a large baking sheet. Drizzle with oil and season to taste with salt and pepper. Roast for 15-20 minutes.

  • Cut cauliflower into bite-sized florets, cut tofu into lil chunks and slice onions into large chunks.

  • Make the dressing by mixing all the ingredients into a bowl.

  • Take out veggies and add dressing. Put in all tofu and veggies.

  • Place the baking sheet back into the oven and roast again for 25-30 minutes, or until vegetables are tender and nicely roasted.

    notes: recipe calls for brussel sprouts, but they need to be cut and boiled before making.. i took them off this recipe because it went astray and I dont even fuck with brusel sprouts like that. Once i learn how to make them it will be good.... anyway
